I loved my vegetables growing up, yet spaghetti squash always repulsed me. Stringy, with a crunch, yet somehow soggy at the same time--it was the stuff of spooky Halloween parties (you know what I'm talking about). Once fall was in full force, I would look around suspiciously at the decorative gourds and squashes that my mom displayed and wonder which ones she was going to make us eat.
I've since reacquainted myself with spaghetti squash and this time, it's love. With a little olive oil, fresh ground pepper, sea salt and a sprinkle of parmesan cheese, spaghetti squash has become a fall staple of mine (cut in half and bake for an hour at 400 degrees). I'm excited to try new recipes but for now I'm pleased enough with the fact that I can eat it without missing actual noodles.

I just made some last week...did not turn out as tasty as yours looks! It was a little squishy. But you're right...it's carb free!
I use spaghetti squash ALL the time and have great recipes if you ever need them. My personal favorite is spaghetti squash with brown sugar and butter or with sauteed sundried tomato, brocolli and feta.
I love spaghetti squash, though I've never tried it this way! I've only ever done it with tomato sauce, but this whole olive oil & fresh parm sounds pretty amazing. Will have to try this soon!

I've never had spaghetti squash!
I just made spaghetti squash this past weekend! So good. Little tip I discovered: I was running late and didn't have time to bake it. So instead, I poked it a bunch of times with a knife and boiled the whole thing for 20 minutes. Cut it in half, and it was perfect!
I love spaghetti squash! And it's awesome with a great marinara sauce on top too :)

I really wish I liked spaghetti squash as much as real pasta. My boyfriend loves it! We cooked it up with some homemade tempeh meatballs and it was good, but still not real spaghetti :(

I love spaghetti squash!
So yummy! My mom would always shred it and bake it in the oven with marinara sauce and cheese-- so good with breadsticks and you feel (kind-of) healthy!
Funny you posted this - I cooked butternut squash for my first time two nights ago and it was SO delicious. I've always been curious about spaghetti squash so I'll have to give this a try. Sounds yummy to me!
I saw that the other day at WholeFoods and been wondering how to use it. Apparently it;s much simpler than I thought!

sooo... do you just shred some squash and fry it in olive oil? that sounds pretty good, whether thats how you make it or not. btw i've never heard of spaghetti squash before. i want to try it.
