I hesitate describing anything as "grown up" but since I used sriracha in the 'recipe', I deemed it appropriate. Grilled cheese is possibly my favorite type of sandwich; what's not to love about melted cheese paired with crusty bread that's grilled with sizzling butter? I love to add avocado for a little more texture and lightly swipe on some mayo combined with a dollop of sriracha My tip for making a grilled cheese even better: use butter both in the pan AND on the bread and cover the grilled cheese while it cooks--it really melts the cheese.
What do you use to spice up your grilled cheese? I'm always looking for new additions!

I've had grille cheese this way, and its amazingly good but oh so bad later. However, its a great guilty pleasure. I've also have had it with tomato + avocado + cheese + finely chopped jalopenos. Its delicious.

I love grilled cheese, too! Grown up comfort food. I'll spice things up with two different types of cheese (sharp cheddar and smoked gouda are my hubby's current faves) and lately - we've been adding a sun dried tomato paste.
Of course...making it a grilled cheese BLT and adding tomato, lettuce and bacon never hurts!
Will definitely be trying the avocado.
I don't normally spice up my grilled cheese sandwiches. Just butter. Cheese. And, bread. Ha! Classic.

This looks so yummy! I like to spread goat cheese on one side and use a lighter-flavored cheese like mozzarella for mine. Sometimes I'll add a few slices of pear for something sweet.
